I meant to be posting on this blog a rye bread recipe for ages but so far it hasn't come out so nicely to share it. But a few days ago I saw a special rye bread recipe on TV (Food Network Italia) from Fulvio Marino (link here). It's special because there are apple and walnut pieces in it! He bakes this bread for Santa Claus at Christmas and leaves a slice with some milk for the good old man.
I baked this bread the following day and it was such a big success that I decided to share my version of the recipe with you. Actually, I didn't change the recipe much, it is more or less the same as in the TV show. I made, however, some small changes. So here's my version of the recipe.
Ingredients:
- 250 ml apple juice (100% fruit content)
- 90 ml water
- 10 g salt
- 150 g wheat flour (all purpose / bread / tipo 0 / T55 / Euro 550)
- 215 g manitoba flour (or standard wheat flour if you don't have it)
- 150 g rye flour (whole grain in the original recipe but I used light rye flour)
- 2 g ground cinnamon
- 8 g fresh yeast (I would use 12 g if I didn't have manitoba flour)
- 65 g walnuts (broken to small pieces)
- 90 g apple (chopped)
Settings:
- Program: 10 rye Bread
- Weight: 500 g
- Crust colour: dark
Another version of this recipe from the same chef (found on the facebook page of È Sempre Mezzogiorno Rai) is without the walnut, and the apple pieces are replaced by 90 g of apple puree. In this version don't add any water to the dough (since the puree naturally has moisture) but keep the apple juice.
